Guilt-free gooey chocolate fudge muffins

Ah - chocolate - the ultimate comfort food and a guilty pleasure for many.  And the good news is that the right kind of chocolate can actually be good for you.

I'm not talking about milk or white chocolate, which are full of sugar.  The healthiest forms of chocolate are dark chocolate (70% cocoa content or higher) and cacao nibs, the original, natural form.

They are rich in minerals, such as iron, magnesium, and zinc and are packed with antioxidants, especially polyphenols and flavanols, which help fight free radicals that can damage the cells in your body. The higher the percentage of cocoa in your chocolate bar, the greater the number of antioxidants.

Try these tasty, gooey chocolate muffins for a sweet, but healthier treat!

Ingredients

Makes 6

240g tinned black beans

3 tbsp cacao powder

40g oats (whizzed in blender)

2 tbsp maple syrup

6 pitted dates

2 tbsp melted coconut oil

2 tsp vanilla extract

½ tsp baking powder

Pinch of salt

80g chocolate chips or chunks smashed into small pieces (minimum 70% cocoa)

Instructions

  1. Preheat oven to180°C.
  2. Place everything except the chocolate in blender and mix until smooth.
  3. Stir in the chocolate chips.
  4. Spoon into 6 muffin cases, or more if you like them smaller.
  5. Bake in the oven for 16-20 mins until skewer comes out cleanly.
  6. Enjoy (in moderation)!
